Typically the grease cup or pans are found in the corners of the hood. The Grease Cup is design to capture grease from the hood trough. The grease cup should be emptied or at least inspected weekly. This should be done at the same time the hood filters are pulled out for cleaning, by the kitchen staff. The hood filters are designed to capture grease, the grease should then roll down the filter into the hood trough. Kitchen Exhaust hoods are to be designed whereas the trough would slope to the corner of the hood.  The trough will have a hole in it where the grease cup will sit below to gather grease from the trough. Without grease cups in a hood system the grease will drip directly onto the floor, behind equipment. This is a very dangerous setting. Open grease (not contained) is a source of fuel for a flash fire or any other type of flame.
